In Poland we love beetroots! We prepare them in many different ways:
marinated, as salads, warm side dishes, as a spread mixed with
horseradish and of course - made into soups, like botwinka
and worldwide known borstch! This simple salad is one of my favorites -
doesn't take long to make, it's slightly sweet and sour and goes well
with any meat dishes you can think of - cutlets, stews, meatballs etc.
INGREDIENTS:
- 3-4 cooked beetroots (you can buy them precooked or cook yourself)
- 1 onion
- 1tbs sugar
- 2tbs vinegar
- 3tbs oil
- salt & pepper to taste
Shred beetroots on a large mesh grater. Add finely chopped onion, sprinkle with salt and pepper. Add sugar, oil and vinegar. Mix all of the ingredients using a spoon and let it rest for about 15 minutes before serving to let it "mature" and to get all of the tastes combined.
Serve as a side dish or with meat-based delights.
