There are days, when you want something delicious but don't want to spend hours cooking - here's solution! An amazing and simple spinach & feta penne done in less than 30 minutes.
INGREDIENTS:
- 250g penne pasta
- 300g frozen spinach
- 250-300g feta cheese
- 100ml cream 18%
- 4-5 cloves of garlic
- salt, black pepper
- olive oil for frying
Cook pasta al dente according to the description on the packaging (about 12 minutes for penne). While it's cooking prepare the sauce - heat up a pan with 1-2tbs olive oil and add frozen spinach, put a little bit of salt and pepper, stir well and let it simmer for about 5 minutes.
Next add crushed garlic, lower the heat and let it cook until the spinach is soft (you can add a little bit of water if you're afraid it's going to burn).
When spinach is nice, soft and slightly garlicy add crumble the feta cheese in and pour the cream into the mixture.

At this point your pasta should be ready, so when the cheese is completely melted, use slotted spoon to take out penne from a pot and mix it in with the sauce. Stir carefuly, until all the ingredients are nicely combined and cook it for few more minutes on low heat.
Serve hot with a little bit of lemon juice.
